These summer cupcakes are perfect for backyard parties and sharing with friends. They're easy, delicious and look seriously adorable! I got a million and one compliments on these guys even though it took me less than half an hour to assemble.

SUMMER THEMED CUPCAKES
INGREDIENTS:
- 12 cupcakes (I used this recipe)
- Blue tinted buttercream frosting (I used this recipe)
- Red sour straps
- Tiny teddies
- Cocktail umbrellas
- Any plain biscuit of your choice (nice, granita etc)
- Piping bag
METHOD:
1. Make the cupcakes and allow to cool until completely cold
2. Make frosting and tint blue using gel food colour or liquid food colour
3. Transfer into piping bag and pipe using wave like techniques
4. Crush up the biscuit (bash them in a zip lock bag with a rolling pin - don't make the crumbs too fine) and sprinkle onto one side of the cupcake
5. On the side with the biscuit, cut up a small bit of the sour strap and place onto the biscuit
6. Dot a tiny bit of frosting onto the sour strap and stick the tiny teddy on top
7. Poke the umbrella into the cupcake next to the sour strap so it covers the teddy
VOLIA! Now you have a sunsmart teddy, lying on a beach mat, on the sand right next to the water!
