Lemon And Poppy Seed Muffins
The lemon and poppy seed muffin is a light and refreshing treat, perfect for any season! Enjoy it as a quick breakfast muffin or a delicious afternoon snack. LEMON AND POPPY SEED MUFFINS
Prep Time: 20 minutes | Cook Time: 25-30 minutes | Makes: 12-15 cupcakes
INGREDIENTS
For the muffin:- 375g plain flour, sifted
- 1 tablespoon baking powder
- 1/2 teaspoon bicarbonate of soda
- 2 tablespoon poppy seeds
- 140g unsalted butter
- 200g sugar
- 2 free range eggs
- 1 tablespoon lemon zest
- 350ml plain yoghurt
- 120g sifted icing sugar
- 2 tablespoon fresh lemon juice
EXTRA EQUIPMENT
- Paper cases
- A cupcake baking tray
METHOD
1. Place paper cases into the muffin baking tray and set aside2. Grate the lemon zest and squeeze the same lemon. Set aside after
3. Grab a small bowl and mix together the flour (make sure it's sifted), baking powder, bicarbonate of soda and poppy seeds. Set aside after.
4. In a large mixing bowl, cream the butter and sugar together until it's fluffy.
5. Beat in the eggs, one at a time and mix together well
6. Add in the lemon zest and mix
7. Beat half the dry ingredients with half the yogurt
8. Mix in the other half of the dry ingredients and the other half of the yogurt
9. Spoon the mixture into the paper cases (aim to leave a little bit of room at the top to allow it to rise but not too much)
10. Bake muffins for 25-30 minutes until they are golden brown
11. Mix together the icing sugar and lemon juice to create the glaze
12. After the muffins are cooked, take them out and top the glaze (1/4 tablespoon should be enough) onto each muffin straight away. (Don't wait for it to cool.)
13. Leave them to cool after the glazing is on top.
