After making the delicious and healthy blueberry pancakes a few months ago, I decided it was time to share another pancake recipe and this time, it's the strawberry breakfast pancakes!
These are light, fluffy and cook really, really fast, which means they're perfect for the rushed mornings! They also taste amazing and are a pretty great way to start the day cause they're filling and healthy! And since the weekend is right around the corner, they'll be a delicious way to indulge before the week starts again!
STRAWBERRY BREAKFAST PANCAKES
PREP TIME: 15 MINS | COOK TIME: SUBJECTIVE | MAKES: 4 - 6 SERVINGS | RECIPE SOURCE: A PASTRY AFFAIR
INGREDIENTS
1 1/2 cup plain flour1 tbsp baking powder
Pinch of salt
1 egg
1 cup milk (healthier option: almond or soy milk)
1 tbsp honey (healthier option: agave)
2 tbsp butter, melted
2 cups sliced strawberries
METHOD
Batter
- In a large mixing bowl, whisk the flour, baking powder and salt
- Make a well in the flour with a spatula and pour in the egg, milk, honey and butter
- Mix till combined
- Add in strawberries
- Spray a pan with non stick spray
- Pour 1/4 cup batter
- Cook till each side is lightly browned
- Sprinkle with icing sugar and serve with fresh fruit and maple syrup
Note: the pancakes may look slightly doughy when they're fully cooked but this is because of the moisture in the strawberries.
