Everyone - let's take a moment to appreciate the beauty that is dark chocolate brownies with cookies n cream ice cream on top. Ok, moment taken!
But for reals though, I cannot get over how absolutely delicious the brownies look! With a soft, moist and fudgy center and crisp outside, they are an absolute party in the mouth. I'm literally getting hungry writing this right now! Not only are these easy and fuss free, they taste heavenly and will be a real winner when served with a cold glass of milk or a scoop of ice cream.
And since we're all lazy (especially me!) and are always super busy, I found the easiest recipe to share today so these bad boys will be a breeze to make.

DARK CHOCOLATE BROWNIES
PREP TIME: 25 mins | COOK TIME: 25 - 35 MINS | RECIPE SOURCE: CUPCAKE JEMMA
INGREDIENTS
250g butter
250g dark chocolate (good quality - 70% cocoa)
350g caster sugar
6 eggs
150g plain flour, sifted
Pinch of salt
1 tsp vanilla extract

METHOD
- Melt butter and dark chocolate in a heat proof bowl over a saucepan of boiling water
- In a separate mixing bowl, add in caster sugar and the eggs
- Start mixing on a slow speed and then turn it up to medium
- Add in the vanilla extract
- Pour the chocolate and butter mixture in
- Add in the sifted plain flour and salt to the bowl containing the mixture
- Keep mixing until the mixture comes together and looks smooth
- Optional: add in some crushed and roasted hazelnuts on the bottom of the pan before pouring the mixture. Make sure to spread evenly
- Pour the mixture into a 10 inch greased or lined pan
- Put into a preheated oven at 180 C for 25 - 35 mins. (Quick tip: keep checking in between the 25 - 35 minute mark. If you want your brownies gooey, turn the oven off sooner than if you want it moist)
- Take out once they're done and allow to cool
- Cut into squares and serve up with ice cream or a cold glass of milk
