The Malteser cupcake is one of my favourite sweet treats. With its soft, moist base, delicious vanilla buttercream frosting and even more Maltesers on top, it is one of the most scrumptious ways to eat maltesers! Other than just being absolutely heavenly in the mouth, they are also very easy to make and no fuss. And I bet most of the ingredients used are already lying around in your kitchen! Anyway, I'm going to stop my rambling so we can get started!
MALTESER CUPCAKE RECIPE
Prep Time: 30 mins | Cook Time: 20-22 minutes | Makes: 12 cupcakes
INGREDIENTS
For the cupcakes:
- 5g cocoa powder
- 25g Milo (Might be called Horlicks or Ovaltine. Just any malt powder will work)
- 95g self raising flour
- 125 caster sugar
- 1/4 tsp bicarbonate of soda
- Pinch of salt
- 135g unsalted butter, softened
- 2 eggs
- 1/4 tsp vanilla extract
- 1 1/2 tbsp whole milk
For the buttercream:
- 200g unsalted butter, softened
- 450g icing sugar, sifted
- 4 tbsp whole milk
- 1/4 tsp vanilla extract
- 100g crushed maltesers
- Maltesers for the top (optional)
METHOD
For the cupcakes:
1. Sift together the self raising flour, milo, cocoa powder, bicarbonate of soda, pinch of salt and the caster sugar into a large bowl. (With the bicarb soda, make sure to put the specific amount otherwise they will spread too much.)
2. Add the unsalted butter and eggs into the bowl
3. Mix for 60 seconds.
4. Add in the vanilla extract and milk. Mix thoroughly
5. Line a muffin tray with cupcake cases and scoop the mixture in about two thirds of the way. Don't worry about spreading it out as that happens naturally in the oven.
6. Pop them into the oven baking for 20-22 minutes at 170 degrees Celcius.
7. Take them out and let them cool down. (This is a must otherwise the icing will melt off)
For the buttercream frosting:
8. Beat the butter until it's pale and fluffy
9. Add in the sifted icing sugar, beating in between to make sure it is all mixed through
10. Add in the vanilla extract and milk and mix well
11. Stop mixing when the icing looks pale and fluffy.
12. Add the crushed Maltesers to the mixture. You can crush them using a food processor or a zip lock bag and a rolling pin. Either way works fine.
13. Mix the frosting together (along with the chunks of Maltesers) until there are plenty of Malteser nuggets throughout the icing.
