Now I don't know about you but I love me some chocolate chip cookies. And when I found the recipe for the mouth watering chocolate chip cookie cream pie, I nearly died and went to heaven (before I tasted it. After I tasted it, I did die and go to heaven!). With a firm, chocolate chip cookie dough base, layers of whipped cream on top and a mini chocolate chip cookie on top, it's the most amazing baked dessert I've had.
CHOCOLATE CHIP COOKIE CREAM PIE

350g plain flour
1 tsp bicarbonate of soda
1/2 tsp salt
1 large free range egg
2 tsp vanilla extract
230g unsalted butter
100g caster sugar
220g light soft brown sugar
150g milk chocolate chips
400ml double cream
2 tbsp caster sugar

METHOD
1. Mix together the caster sugar, brown sugar and butter for a minute and half using an electric mixer
2. Make sure to mix the egg and vanilla extract in a small, separate bowl
3. Add into the bowl with the other ingredients and mix on a low speed for 30 seconds
4. Sift the plain flour, bicarbonate soda and salt
5. Mix into the big bowl with ingredients for 30 seconds on a slow speed
6. When it starts to clump together, add in the chocolate but hold back a tiny bit back for later

4. Sift the plain flour, bicarbonate soda and salt
5. Mix into the big bowl with ingredients for 30 seconds on a slow speed
6. When it starts to clump together, add in the chocolate but hold back a tiny bit back for later
7. Once it has all come together, add half the dough into an 8 inch tart tin greased with butter. Use your hands to press it down and into the edges. Add the left over chocolate on top
8. Use the rest of the dough to create small balls for the cookies. Roll them between your palms (no need to spread them out manually, it'll happen in the oven) and place onto a cookie sheet, leaving spaces in between as they will spread
9. Put both the trays into the oven at 170 degrees Celcius but keep an eye on time as the cookies only need 7 minutes in the oven while the pie needs 15-18 minutes
10. Take them out when they're ready and leave to cool completely
11. Whisk your double cream and caster sugar to a soft peak. It should be in the middle of runny and stiff.
12. Once it's ready, use a palette knife to spread it all over the pie
13. Using the mini cookies, pop them on top as a cute decoration
14. Grate some more milk chocolate over the top if you want!
